Currently, Connector can use a gRPC sidecar or a service to convert events to projection operations. The conversion must follow the projector type. It means that if we need a new target, we need to support a new projector. It's not always feasible. The workaround could be that Connector can support projecting to a generic gRPC service without executing the projection operations as the service will do it. We need to get the starting checkpoint from the service and tell the service to commit the checkpoint when the time comes.
